I'm here today to show you my favourite recipe ever! Pad thai!
It's from The Bamboo Restaurant Cookbook.
You'll need...
1/3 pkg thai rice noodles
vegetable oil
4 garlic cloves crushed
4 eggs
4 tbsp thai fish sauce
4 tbsp lemon juice
4 tbsp ketchup
2 tbsp sugar
1/2 cup peanut butter
4 handfulls bean sprouts
green onion
pepper
mushrooms
broccoli
First off you want to cut your veggies.
I like to put green onions, orange pepper, mushroom, broccoli, sprouts.
But you can use whatever veg you like
Then time to boil a full kettle of water for the rice noodles.
Whisk four eggs in a small bowl.
Now its time for the most yummy sauce ever! You'll need...
1. Lemon juice
2. Ketchup
3. Peanut butter
4. Fish sauce
In a bowl you want to mix 4 tbsp fish sauce, 4 tbsp lemon juice, 4 tbsp ketchup, 2 tbsp sugar, half a cup peanut butter (I do two big tbsp's full). Mix well in bowl.
Now once your water boils put your rice noodles in a heat safe bowl and pour it over till they are covered. Put a plate over top to keep the heat inside and leave till they are soft.
In a wok on high put the garlic and chilly peppers mixed with vegetable oil. Then one by one add the hardest veggies that'll take longest to cook until you have all your veg in the wok.
Then you want to pour your eggs into your veggies and cook them like a scrambled egg. Then strain your noodles and add them in! Cook everything for a minute till combined. Then add the sauce and mix together.
And there you have it! Your very own yummy pad thai!

I would never have guessed! and peanut butter! It makes sense now that I think about it. But the initial thought of peanut butter and ketchup is weird.

ReplyDeleteYou've reminded me that I need to get a better wok. Ours is scratched up and I don't trust it to not chip teflon.
My fave part of pad thai is the peanuts chopped on top, mmm.
Looks so yummy. Now i will have to make Pad Thai this week. Bulk Barn peanut butter is the best.
