First off cut all the veggies you want to put in your spring rolls ( I like cucumber, green pepper and tofu.)
Then its time to Grate the Carrot and make the sauce to put the Carrot in.
Mix in a small bowl...
2 tbsp lemon juice
2 tbsp vinegar
a dash of sesame seed oil
1 tsp sugar
Now this is the hard part... heat up your kettle and try to get the water so its not to hot and not to cold... you want it so you can put your finger in and not have it burned.
Put your Rice paper circles in the water till they are rubbery and moveable. Remove excess water and place on a large plate.
Now for the fun part! place your veggies in the middle in a rectangle shape...
Then fold the sides in...
Then the bottom...
Then roll it up and your done!
